These senbei crackers are made from loaches (dojō in Japanese), freshwater fish that are high in nutrients. The entire senbei can be eaten, including the bones.
Loaches are raised in the Mitsumori area of Nikaho City. The hilly terrain (hummocks) of this area was created by a sector collapse of Mt. Chokai long ago. Additionally, the warm current flowing offshore makes the climate here relatively warm, and nearby spring water brings nutrients. These conditions work together to help raise these loaches.
