Junmai Daiginjō Sake “Chokaisan”

This sake is made using the underground water of Mt. Chokai and rice cultivated along the Koyoshi River. It is a sake that can only be brewed here, on this land blessed with nature, water, and rice.
This sake is brewed using a flower yeast that was isolated by the Department of Fermentation Science at the Tokyo University of Agriculture. It has a floral aroma and mild taste.
