These soba noodles are made with flour from buckwheat grown and sun-dried in the Tazawa area of Sakata City. The large temperature difference between day and night in this area gives the buckwheat grown here a high starchiness, making it sweet, and the gluten content gives the noodles their characteristic firmness. This meal comes with a special grilled rice ball made with the soba chef’s homegrown rice.
