
The Gakkō-gawa River system, where river crabs live, has many rivers that are supplied by spring water from Mt. Chokai. These rivers hold a lot of food for these crabs, as well as the cold, clear environment they prefer, making this a suitable habitat for them. The people living at the foot of Mt. Chokai have used these river crabs for food since long ago.
This soup is made with miso from soybeans produced in the Shōnai Plain and sweet kabocha squash (Japanese pumpkin), both nurtured by spring water from Mt. Chokai. Enjoy this river crab soup from Mt. Chokai, the “mountain of water.”
